Flying Infinity heirloom-breed Texas Longhorn cattle are raised right here on the eastern edge of the hill country in Travis County, Texas. A CTLR registered pure-bred herd.
We work with the NRCS to establish native grasses for sustainable, natural, organic grazing.
Flying Infinity naturally-raised grass fed Longhorns are not sold before they are 2 years old. This gives them a chance to develop that rich grass fed flavor and become the low-cholesterol, nutritious beef that meets our standards. Complexity of flavor and marbling are products of this maturity.
Our happy cattle run in family groups as long as possible. Calves are naturally weaned after 8~9 months of age by the mother.
Our beef cattle graze open pastures with plenty of water and are allowed to grow at their own rate with no antibiotics or growth hormones administered.
Natural grass feeding / grass finishing cattle is slower and healthier than cattle that have been force-fed grain just to sell them young. Grass feeding and finishing uses the soil, season and plant life to produce artisan beef.
Grass feeding and finishing beef takes twice as long (with twice the care) compared to forced-grain feeding in feedlots.
Different forages mature at various times of year. We know which forages perform best in our soil types and climate and what must be planted so the animals always have a fresh supply of lush native green forage. Beef grazed on grass takes on subtle characteristics of the forage consumed. We grow the forages that are sweet and therefore produce sweetly flavored beef.
